Weber's Supper Club

Located two miles west of Ann Arbor, Michigan, at 3050 Jackson Road (U.S. Highway I-94 off ramp at Ann Arbor), this restaurant is open daily noon to midnight. Closed all legal holidays. Owner Herman Weber also operated the Holiday House Motel, open the year round. The restaurant's Almond Rum Cream Pie is a favorite!


Almond Rum Cream Pie


Ingredients:
  • 2/3 cup fine granulated sugar
  • 1/3 cup cake flour
  • generous dash of salt
  • 2 large eggs, slightly beaten
  • 8 tablespoons rum
  • 1 1/2 cups scalded milk
  • 1/2 cup almonds, blanched and toasted
  • 1 cup whipping cream, whipped
  • 1/2 cup unsweetened chocolate, shaved
  • 9-inch crumb pie shell, chilled

Directions:

1. Sift flour, sugar, and salt into top of double boiler. Stir in eggs with 3 tablespoons of rum.

2. When the mixture is thoroughly blended, stir in scalded milk with 5 tablespoons of rum very gradually, almost drop by drop.

3. Cook over hot water, stirring constantly, until the mixture thickens. Cool.

4. Sprinkle pie shell with almonds and pour in rum cream filling.

5. Cover with whipped cream and garnish with shaved chocolate.
