Ingredients:
- 2 broilers, boned and halved
- 1/4 cup white rice
- 1/4 cup brown rice
- 2 tablespoons butter
- 1/2 cup chopped or sliced mushrooms
- 2 tablespoons poultry seasoning
- salt and pepper to taste
- oil
- paprika
- 1/2 cup dry white wine
Directions:
1. Boil combined rice 15-18 minutes in salted water.
2. In skillet melt butter and sauté mushrooms until tender.
3. Combine rice, mushrooms, poultry seasoning, salt and pepper to make
a dressing. Place 1/4 of dressing between breast and thigh of each
chicken. Fold leg flesh over and press firmly together to keep dressing
intact. Place breast side up on greased baking pan.
4. Brush each chicken piece with oil. Sprinkle with paprika.
5. Roast at 375 degrees for 55-60 minutes, basting occasionally with
white wine. Serves 4.
