  Chicken Country Captain


Ingredients
  • 3 chicken fryers cut in pieces
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • paprika
  • 2 cloves garlic, chopped
  • 4 medium onions, chopped
  • 3 green peppers, chopped fine
  • 3 #2 cans tomatoes
  • 1 dash cayenne
  • 1/2 teaspoon thyme
  • 1 teaspoon curry powder
  • 1/2 cup chopped parsley
  • 1 cup currants
  • 1/2 pound blanched toasted almonds

Directions

1. Roll chickens in mixture of flour, salt, pepper and paprika. Fry in deep fat until golden brown.

2. Place in a roaster, add 1/2 cup hot water and steam slowly.

3. To fat add garlic, onions, and green peppers and brown slightly.  Add 1/2 cup water and cook 10-15 minutes.

4. Blend in tomatoes and remaining seasonings. Cook until smooth.

5. Pour over chicken and cook until tender - about 1 hour.

6. Add currants and almonds.

7. Serve with wild rice.
