Ingredients
- 3 chicken fryers cut in pieces
- 1 teaspoon salt
- 1/2 teaspoon pepper
- paprika
- 2 cloves garlic, chopped
- 4 medium onions, chopped
- 3 green peppers, chopped fine
- 3 #2 cans tomatoes
- 1 dash cayenne
- 1/2 teaspoon thyme
- 1 teaspoon curry powder
- 1/2 cup chopped parsley
- 1 cup currants
- 1/2 pound blanched toasted almonds
Directions
1. Roll chickens in mixture of flour, salt, pepper and paprika. Fry in
deep fat until golden brown.
2. Place in a roaster, add 1/2 cup hot water and steam slowly.
3. To fat add garlic, onions, and green peppers and brown slightly.
Add 1/2 cup water and cook 10-15 minutes.
4. Blend in tomatoes and remaining seasonings. Cook until smooth.
5. Pour over chicken and cook until tender - about 1 hour.
6. Add currants and almonds.
7. Serve with wild rice.
