Grand Pacific Hotel and Steakhouse

This hotel, at 205 North 4th Street in Bismarck, North Dakota, was once a stagecoach stop across the Missouri River from General Custer's cavalry post. The Steakhouse is open for dinner daily except Sunday. Overnight accommodations are also available.


Goose Stuffed with Wild Rice Dressing


Directions

1. Bring to a boil 4 cups of water and 1/2 pound wild rice and cook slowly for 10 minutes.

2. Melt 1 1/4 pounds of butter in a heavy pan and then sauté: 3 cups celery, chopped; 2 cups onion, chopped; 5 strips cooked bacon, chopped; and 1/2 pound hamburger, fried. Season with 3 teaspoons salt and 1 teaspoon pepper.

3. Soak 1/2 loaf of broken dry bread slices in warm water and squeeze dry.

4. Mix all ingredients well. Stuff a 10- to 12-pound goose and roast as usual.
