Hollands
At 216 First Avenue SW, in
downtown Rochester, Minnesota, Hollands is a block from the famed Mayo
Clinic. Two cafeterias and a sandwich shop are open daily except Sunday
for breakfast, lunch, and dinner. Newton Holland was one of the first
restaurant owners to display art works; today there are 3 galleries. Leon
Latz now owns the 54-year old restaurant. |

1. In the oven brown 3 ounces
ground onion with 8 ounces ground beef; season with salt and pepper and
1/3 teaspoon sugar.
2. Add 1 1/2 cups tomato; 2
cups tomato juice; 1 cup carrots, diced; 2 cups water and 1/4 pound rice.
Simmer mixture on top of stove for 1 hour.
3. Add 1 teaspoon
horseradish, 1/2 teaspoon vinegar before serving.
Makes 8 cups. |
