At 216 First Avenue SW, in downtown Rochester, Minnesota, Hollands is a block from the famed Mayo Clinic. Two cafeterias and a sandwich shop are open daily except Sunday for breakfast, lunch, and dinner. Newton Holland was one of the first restaurant owners to display art works; today there are 3 galleries. Leon Latz now owns the 54-year old restaurant.

 Hollands Request Salad

•  1/2 cup dry raisins
• 1/4 cup mayonnaise
• 1/4 cup crushed pineapple
• 1/3 teaspoon salt
• 2 cups carrots, shredded
• 1/2 cup celery, chopped
• 1/4 cup pineapple, diced

Directions:

1. Soak raisins overnight. Drain.

2. Combine mayonnaise, crushed pineapple, and salt.

3. Combine all remaining ingredients.

Serve on lettuce. Makes 10 portions.
