The Wright Tavern

This is one of the most historic taverns in the country, and it has remained almost intact since Paul Revere's time. Specialties are old-fashioned cooking at its best - meat pies, johnnycake, beans, and Indian pudding. Open for breakfast, lunch, and dinner, except Monday.


  Baked Indian Pudding


Ingredients
  • 1 quart milk
  • 1 tablespoon butter
  • 1 egg
  • 1 cup molasses
  • 1 teaspoon ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon mace
  • 1/8 teaspoon clove
  • 1/4 teaspoon salt
  • 6 tablespoons corn meal
  • 1 cup milk, additional

Directions

1. Scald 1 pint of the milk; mix with the other pint of milk.

2. Cook over hot water 20 minutes, then add butter, egg, molasses, spices, and corn meal. Pour into buttered baking dish.

3. Bake in 300 degree oven; after 30 minutes pour cup of milk over pudding.

4. Continue baking for 2 hours.
