The Wayside Inn

The poet Longfellow, in Tales of a Wayside Inn, describes this as a "region of purpose". In 1923 it was purchased by Henry Ford and was furnished with rare antiques. Open for breakfast, lunch, tea, and dinner. Reservations necessary on Sunday. Overnight accommodations.


   New England Clam Chowder


Ingredients
  • 1 quart clams, chopped, and juice
  • 1/4 pound salt pork, diced
  • 2 medium onions, diced
  • 3 cups diced raw potatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups boiling water
  • 1 quart milk
  • 2 tablespoons butter
  • 1 pint light cream

Directions

1. Cook pork until crisp; add onions, and cook 5 minutes.

2. Mix in potatoes, seasonings, and water; cover pan and simmer for 10-15 minutes.

3. Add clams and their juice; then milk, butter, and cream. Heat and serve.
