The Wayside Inn

The poet Longfellow, in
Tales of a Wayside Inn, describes this as a "region of purpose". In
1923 it was purchased by Henry Ford and was furnished with rare antiques.
Open for breakfast, lunch, tea, and dinner. Reservations necessary on
Sunday. Overnight accommodations. |
New England Clam Chowder

Ingredients
- 1 quart clams, chopped, and juice
- 1/4 pound salt pork, diced
- 2 medium onions, diced
- 3 cups diced raw potatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups boiling water
- 1 quart milk
- 2 tablespoons butter
- 1 pint light cream
Directions
1. Cook pork until crisp; add onions, and cook 5 minutes.
2. Mix in potatoes, seasonings, and water; cover pan and simmer for
10-15 minutes.
3. Add clams and their juice; then milk, butter, and cream. Heat and
serve.
