Directions
1. Heat 2 1/4 cups homogenized
milk to 180 degrees; cool to 110-112 degrees.
2. Dissolve 1 ounce dry
yeast, 1 ounce salt, 1 1/2 tablespoons honey or sugar, 2 well-beaten eggs
and 1/4 cup melted shortening into cooled milk. Mix into 2 pounds hard
wheat flour with electric mixer at low speed for 5-8 minutes.
3. Knead dough, then let
rise at room temperature until double in size. Shape into 2 loaves and
place on greased baking sheet, allowing time to rise a second time until
double in size.
4. Bake at 340 degrees for
30 minutes, remove, and brush loaves with butter.
5. Slice an inch thick or
more and serve very hot. Yields two 27-ounce loaves. |
