In the hub of the National Park area, this lodge is a favorite with tourists because of the true Western hospitality and its home-cooked meals. Open for breakfast, lunch, and dinner. Overnight accommodations and reservations suggested. Closed December 1 to April 15.


  Pot Roast


Ingredients
  • 5-pound beef roast
  • 1 quart water
  • 1/2 tablespoon mixed spices
  • 1 tablespoon salt
  • 1tablespoon sugar
  • 1 stalk celery, diced
  • 2 onions, sliced
  • 1 teaspoon pepper
  • 1/2 teaspoon curry powder

Directions

1. Let roast stand in mixture of other ingredients 24 hours.

2. Remove meat and sear in 425 degree oven for 20 minutes.

3. Pour liquid over meat; cover and bake in 300- to 350- degree oven 2-3 hours, until tender.

4. Remove meat. Mix 2 tablespoons melted butter and 2 of flour, add to gravy.

5. Cook gravy until thick. Strain and pour over meat.

6. Serve with noodles or pineapple fritters.
