The Glass House
Diners have a fascinating
view of the traffic rolling beneath on the Will Rogers Turnpike. The
Broiler Room is open daily 7:00 AM to 8:30 PM; summer 11:00 AM to 9:00 PM.
The Express Buffet is open only during the summer season, 6:00 AM to 5:00
PM. The Snack Shop is open 24 hours. The Glass House spans the new 88-mile
toll turnpike south of Vinita, Oklahoma. |
Ingredients:
- 3 pounds beef tenderloin
- Marinade (below)
- 1 pound bacon, sliced
- 36 mushroom caps,
lightly sautéed
- 6 ounces Roquefort
cheese, grated
- Water cress and tomato
wedges for garnish
Directions:
Cut beef into 30
inch-and-a-half cubes. They must be free of sinew and fat. Place in
marinade overnight in refrigerator. Arrange ingredients on 6 ten-inch
skewers or brochette needles. First place a mushroom cap on skewer, next a
chunk of marinated beef, then a 1-inch slice of raw bacon; repeat until 5
chunks of beef are on each skewer. End each with a mushroom cap. Broil
over a charcoal fire or under broiler of stove, turning occasionally until
done (about 15 minutes for medium). Remove from fire and sprinkle each
serving with 1 ounce of cheese. Return to broiler until cheese melts
(about one minute). Serve hot with water cress and tomato wedges. Makes
about six portions.
Marinade:
Crush 2 cloves garlic with
1 1/2 teaspoons salt. Add 2 cups olive oil; 1 cup tarragon vinegar; 1 1 /2
teaspoons freshly ground black pepper; 1/8 teaspoon each marjoram and
oregano; 3 bay leaves; 1 teaspoon paprika; 1/4 lemon (sliced thin) and 1/4
cup chopped onion. Blend well. |
