Mayhew's Oak Creek
Lodge
This friendly and relaxed
vacation resort is located in breathtakingly beautiful country, long a
favorite for movie companies. It is just off U.S. Route 89A, 29 miles
south of Flagstaff in Sedona, Arizona. Breakfast, lunch, and dinner served
daily; overnight accommodations and vacation facilities. Reservations
required for rooms and meals. Closed from the first of December to April. |
Zucchini Croquettes
|
Ingredients:
- 4 medium size zucchini
- 1/2 cup biscuit mix
- 3 eggs
- pinch each of: onion salt, garlic salt, pepper, and sweet basil
- 1 cup cooked chicken, ham, beef, or corned beef
- 3 tablespoons oil or butter
Directions:
1. Grate zucchini coarsely. Stir in biscuit mix, eggs, seasonings, and
mix well. Finally add the chopped meat.
2. Form into 8 flat shaped croquettes. Pan fry in butter or oil on both
sides. Makes 8 croquettes. |
